Nordic-Japanese Date Night - ASI

Bring your date (or a good friend) for a foodie date night! The Japanese and Nordic culinary scenes have had plenty of conversation and exchange in recent years, with a mutual love of seafood and an emphasis on simple and direct flavors. Instructor Patrice will pull together inspiration from her time living in Japan and travels in Scandinavia into a cozy meal that celebrates winter flavors from both regions. Students can also jump in and help with the meal prep, so come ready to participate!

Prepare an inspiring winter Nordic-style meal that will have your family and friends salivating as you reveal this creative menu! Join our intimate cooking class to prepare an appetizer of brandade (Nordic style), a seasonal soup (apple, pumpkin, squash, or gjetost with cider), plus rye crisps, a special surprise dessert, and a cocktail/mocktail to pair with the delicious food! As you are cooking, Patrice always shares her extensive knowledge of Nordic cuisine, revealing both the history of these dishes and her own personal family traditions along the way. Swedish Meatballs for Everyone - ASI

Delicately spiced meatballs are a hallmark of the Swedish table for both weeknights and holidays, and variations abound that entice all eaters. Meatball historian Patrice will demo one classic pork-beef meatball recipe, one vegetarian version, and all the important accompaniments. Other adaptations will be discussed in class while we enjoy a full meatball meal together, and students will leave with a set of recipes to see them through many future meatball dinners.

Intro to the Nordic Table - ASI

Join Patrice for an introduction to ASI’s Nordic Table program in this demonstration-based class. As we prepare and share a light meal, we’ll explore the central tenets of New Nordic cuisine, including seasonality and locally sourced ingredients, and their applications to today’s Midwestern tables. We’ll also touch upon how environment, migration, and trade have changed and preserved food traditions in Scandinavian and Scandinavian-American communities over the past 150 years. Our menu and discussion will share just how diverse, colorful, and nutritious the Nordic Table can be!

Baking Kringle - ASI

Variously known as kringle, Danish puff, or kringler, an almond-laced pastry is a part of many families’ baking traditions. But where did this popular treat originate, and why does it have so many names? We’ll discuss the many variations, from pie crusts to breads to jam-filled pastries. Then instructor Patrice will share two of her favorite versions, along with tips and tricks to bake the perfect kringle at home. You’ll be prepared to head home and host a classic coffee party!

The Art of the Smörgås - ASI

Dive into the world of the smörgås, the Swedish open-faced sandwiches so important to Swedish cuisine. Participants will discuss the special place open-faced sandwiches hold in the Nordic countries, the crucial elements to building a perfect smörgås, and practice eating them! Nordic food guru Patrice will lead students through a whirlwind tour of her favorite combinations, from classic toppings to fun Midwestern twists.
This is a demonstration-style class and includes a light meal. Coffee and tea are provided; additional beverages are available for purchase prior to class. Please confirm dietary restrictions with ASI upon registration.
