The Art of the Smörgås - ASI

Dive into the world of the smörgås, the Swedish open-faced sandwiches so important to Swedish cuisine. Participants will discuss the special place open-faced sandwiches hold in the Nordic countries, the crucial elements to building a perfect smörgås, and practice eating them! Nordic food guru Patrice will lead students through a whirlwind tour of her favorite combinations, from classic toppings to fun Midwestern twists.
This is a demonstration-style class and includes a light meal. Coffee and tea are provided; additional beverages are available for purchase prior to class. Please confirm dietary restrictions with ASI upon registration.

From pickled to smoked to deep fried, herring aficionado Patrice Johnson will guide participants through a meal that will take them from Viking times through to the present, with plenty of surprises. Participants will walk away with lots of ideas for incorporating herring into summer meals, from light suppers to picnic lunches.

Swedish Pizza - ASI

Believe it or not, pizza is one of Sweden’s most popular foods, and there are many unique twists informed by Sweden’s thousands of immigrant-owned pizzerias, from kebabpizza to banana-curry. Patrice Johnson will walk students through setting up for a perfect pizza night at home, a few classic Swedish combinations, and her take on the requisite side: pizzasallad, a vinaigrette-based cabbage salad always eaten with pizza in Sweden.

Two of Minnesota food writer Patrice Johnson’s favorite things are updated takes on Scandinavian favorites and the Great Minnesota Get Together, so you can bet this State Fair-themed menu is going to be a hoot! Get ready for fried delicacies on a stick in this demonstration-style class, which will be outside, weather permitting.

Nordic Farmers Market (Online) - Vesterheim

We'll spend our class creating a "farmers market to table" meal, taking seasonal produce and making our own unique Nordic feast. Before class you will receive a list of produce options to shop for (or harvest!), and you will have an opportunity to add your own local ingredients to your dishes. Menu will include appetizers, main course, dessert, and seasonal beverages.
